Baby shower desserts: Bread Pudding


Bread pudding

       Ingredients:

       2 cups of sugar
       2 cups milk
       5 eggs beaten
       2 tsp of vanilla extract
       3 cups cubed bread
       1 cup light brown sugar
       1/2 stick butter
       1 cup chopped pecan


Instructions:

Preheat oven at 350 degrees
grease a 13 x 9 pan
mix together milk, eggs, sugar and vanilla in a bowl
pour over bread cubes
let sit for 10 minutes
in another bowl mix in butter, sugar and pecans
pour bread mixture into greased pan
sprinkle brown sugar mixture over the top
bake for 40 to 45 minutes

Instructions for sauce:

Mix butter, sugar, eggs and vanilla in a saucepan over medium heat
stir well until the sugar is melted
add the brandy
pour over bread pudding




Brownie Fudge a la mode

Ingredients:

3/4 cup flour
1 cup sugar
7 tbsp cocoa
1/2 tsp baking powder
2/3 cup butter
3/4 tsp salt
2 eggs
1 tsp vanilla
1 tbsp corn syrup
vanilla ice cream

Instructions:

Grease an 8 square baking pan
stir flour, cocoa, sugar, baking powder and salt into a mixer
add remaining ingredients and beat until smooth
pour mixture into the greased baking pan
bake 8 to 10 minutes





Baby shower desserts: Chocolate Mousse

       Ingredients:

       4 oz of chocolate chopped into small pieces
       2 large eggs
       2 tbsp of butter
       1/8 tsp of creme of tartar
       1/2 tsp of vanilla extract
       3 tbsp <#> of sugar
       1/2 cup of heavy cream



Instructions:

In a medium size stainless steel bowl set over a saucepan of simmering water
melt the chocolate and butter
remove from heat and set aside to cool for a few minutes
then whisk in the two egg yolks
refrigerate while you whip the egg whites and whipping cream
in the bowl of your electric mixer whip the two egg whites with the cream of tartar
add 2 tbsp of sugar and vanilla extract until soft peaks form
remove the chocolate mixture from the refrigerator
stir in a couple of spoonfuls of the beaten egg whites into the chocolate mixture
add the remaining whites, fold in the whipped cream
spoon the chocolate mousse into six individual serving dishes
cover and refrigerate for a couple of hours
top with whipped cream, a few raspberries and shaved chocolate





Banana Bread

       Ingredients:

       1 cup of butter
       2 cups of sugar
       7 large bananas mashed
       1 1/2 tsp of vanilla extract
       4 eggs
       3 cups of flour
       1/2 tsp salt
       2 tsp baking soda



Instructions:

Blend the butter and sugar
add the bananas, vanilla and eggs
whisk together all the dry ingredients
add to the bread mixture and mix
pour into 2 greased loaf pans
bake at 350 degrees for 35 to 40 minutes
give it the clean toothpick test





Baby shower desserts: Cinnamon Muffins

Ingredients:

2 cups of flour
1 egg
3/4 cup milk
1/3 cup oil
1/4 cup sugar
3 tsp cinnamon
2 tsp baking powder
1/2 tsp salt

Instructions:

Preheat oven to 375 degrees
grease 12 muffin cups
in a bowl mix flour, half of the sugar, salt and baking powder
in a separate bowl stir egg, milk and oil
add egg mixture with the flour mixture and stir
fill muffin cups 2/3 full
in a small bowl mix together remaining sugar with cinnamon
sprinkle over top of muffins
bake 30 minutes or until toothpick comes out batter-free





Caramel Dip

Ingredients:

2 tbsp butter
1/2 cup packed brown sugar
1/3 cup condensed milk
1/4 cup light corn syrup
2 tsp water
2 tbsp English toffee bits
1/4 tsp vanilla extract


Instructions:

In a small saucepan combine butter, brown sugar, corn syrup, milk and water
cook and stir over medium heat until smooth
remove from heat
stir in toffee bits and vanilla





Baby shower desserts: Banana Muffins

       Ingredients:

       1/2 cup butter
       1 cup sugar
       2 eggs
       2 large bananas
       1/2 tsp baking soda
       1 tsp salt
       2 cups flour
       1 tsp baking powder
       1 tsp vanilla extract
       1 cup buttermilk
       1/2 cup chopped pecans (optional)


Instructions:

Grease 12 muffin cups
whip butter and sugar with an electric mixer until fluffy
beat in eggs
add bananas and vanilla, beat until smooth
mix the flour, salt, baking powder and baking soda
stir flour mixture into butter mixture alternating with the buttermilk
stir until dry ingredients are moistened
stir in chopped nuts
spoon banana batter into muffin cups, filing about 2/3 full
bake at 400 degrees for 18 to 20 minutes or until golden brown
