PASTRY BAGS For these baby shower cupcakes I would suggest disposable pastry bags they are less expensive and when your done piping simply discard or then again you can use Ziploc freezer bags. If you love baking and want to continue after this little project, may I suggest investing in strong polyurethane bags, they are reusable and easy to clean. They can also be use in many different dessert recipes.
PIPING TIPS The right tips makes all the difference, for instance you will find the round tip (3) which is used for outlining details, writing, making dots, lines, lattice and finishing touches, another tip is the leaf tip (67) which will create perfect leaves for floral arrangements, you can also find the flower tip (106) which obviously makes flowers and is the easiest flower tip for beginners, one very often used tip is the star tip (16) which will produce rosettes, star shapes, shells and flowers and last but certainly not least the basket weave tip (47) which is perfect for woven design.
COUPLER Use a coupler to easily switch out piping tips, one part of the coupler goes inside the bag and the other part is to screw on the outside, which will keep the tips nice and solid for use.
SPRINKLES A galaxy of decorations are available out there, you can find some at your local grocery store but you will find all you need at your nearest hobby store like Michael's.
CUPCAKE TIPS AND TECHNIQUES
SPREADING FROSTING
Creating a perfectly smooth cupcake top is simple when you follow these tips.
- Spread the frosting up to but not over the edge
to avoid messy fingers when removing that paper liner - Make sure your frosting is at room temperature to make it easier to spread on your cupcakes
- I would suggest store bought frosting if you are a beginner, it is consistently thick and creamy and really taste great but with that said, stay away from low sugar frosting's and low fat frosting's they do not have the same consistency and will make your baby shower cupcakes look droopy, oh! and also stay away from whipped frosting.
- Don't be afraid to use a large amount of frosting on each cupcake, this way you can glue down all those yummy sugary toppings.
- Use a Ziplock bag as a piping bag. Make a small slit sideways in the bottom corner of the bag, about 1/4 in, insert a coupler into the bag, add the tip of your choice into the coupler and screw it on from the outside of the bag.
- To make filling easy, insert the bag in an empty glass, fold the bag over the edge of the glass, using the spatula fill the bag with frosting about half way, take the bag out of the glass and twist until the air is removed or until you see the icing sipping threw the end tip. Give your cupcakes some personality and serve your guests edible art.- Filling baby shower cupcakes There are several ways to fill a cupcake, first fill a Ziplock bag with jam, vanilla cream, chocolate mousse or any type of filling you like, cut the middle top part of the cupcake halfway in, fill with your choice of filling, cut the bottom part of the piece you originally cut off which will become a flat circle of cake and just put it back on top then decorate your cupcake on the outside. - Cupcake batter The Ziplock bags are great for filling cupcake liners. It's easier for measuring the amount you need and best of all no mess. The amount of batter you put in the cupcake liner will determined it's shape, to make a traditional cupcake you would need to fill the liner two-thirds full, for a straight-top cupcake which will barely cover the edge, you need to fill your liner halfway, and finely if you need a lot of canvas to work with you need an oversize cupcake top fill the batter three quarters of the liner.
- Cupcake liners I prefer paper liners simply because the cupcakes are easier to get out of the pan, they are easier to handle and the liners keeps them fresh longer. Paper liners are available in many different colors, patterns and sizes.

Chocolate Baby Shower Cupcakes

       Ingredients:
       3 eggs
       3/4 cup of cocoa powder
       3/4 tsp baking powder
       2 cups of sugar
1 1/2 cup of milk
3/4 cups of butter
2 cups of flour
1 tsp baking soda
1/2 tsp salt
2 tsp vanilla
Instructions:
In a medium bowl stir together flour,cocoa powder,baking soda and salt. Set aside
Preheat oven at 350 degrees. In a large bowl with the electric mixer, beat the butter for 1 minute
Add sugar, continue beating for 2 minutes until both ingredients are fluffy and light
Add eggs, one a the time, beating well
Beat in vanilla, add flour mixture we prepared at the very begging and milk to butter mixture
Combine all ingredients continue beating at low speed
Add batter to prepared muffin cups, filling each cup two-thirds full
Bake 20 minutes or until toothpick inserted comes out clean

Vanilla Baby Shower Cupcakes

Ingredients:
2 1/2 cups of flour
1/2 tsp baking soda
1/2 cup milk
1 tsp vanilla extract
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup vegetable oil
1 stick butter
3 large eggs
Instructions:
Preheat oven 350 degrees and prepare 24 muffin cups with paper liners
Combine the flour, baking soda, baking powder and salt in medium bowl
Combine all liquid ingredients, milk, vanilla extract and oil in other bowl
In a mixing bowl add the butter and sugar with an electric mixer, mix until light and fluffy
Add the eggs one by one mixing well between addition
Add the flour mixture with the milk mixture, mix until blended
Add batter to prepared muffin cups, filling each cup two-thirds full
Bake 20 minutes or until toothpick inserted comes out clean
Remove cupcakes from muffin cups
Completely cool down before decorating
Banana Baby Shower Cupcakes

Ingredients:
       1 1/2 cups of flour
       1/2 ts baking soda
       3 bananas
       1 stick of butter
       2 large eggs
       1 tsp baking powder
       1/4 tsp salt
       1/3 cup buttermilk
       1 1/4 cup sugar
       1 tsp vanilla extract
Instructions:
Preheat oven at 350 degrees and prepare 18 muffin cups with cupcake liners
Combine the flour, baking soda, baking powder and salt in a bowl
Mash the bananas with the buttermilk in another bowl
In a third bowl using a mixer, mix butter and sugar until light and fluffy
Add eggs, one at a time, mixing well after each addition
Add the flour mixture alternately with the banana mixture mixing at slow speed until blended
Stir in the vanilla
Add batter to prepared muffin cups, filling each cup two-thirds full
Bake 20 minutes or until toothpick inserted comes out clean

Red Velvet Baby Shower Cupcakes

Ingredients:
2 1/2 cups flour
1 teaspoon baking soda
1/2 cup cocoa powder
1/2 teaspoon salt

1 cup butter
4 eggs
1/2 cup milk
1 cup sour cream
1 ounce Red Food Color
2 teaspoons McCormick® Pure Vanilla Extract
Instructions:
Preheat oven at 350 degrees, prepare 30 muffin cups with paper liners
Mix flour, cocoa powder, baking soda and salt in bowl. set aside
Use electric mixer to mix butter and sugar, beat on medium until light and fluffy
Add eggs, one at a time, mixing well
Mix in milk, sour cream, vanilla and food coloring
Add flour mixture and blend with mixer on low
Add batter to prepared muffin cups, filling each cup two-thirds full
Bake 20 minutes or until toothpick inserted comes out clean

Ingredients:
       1/2 cup sugar
       1 1/4 cup flour
       1/4 tsp salt
       1 egg, beaten
       1/2 tsp vanilla
       1/3 cup chopped almonds

       1/3 cup butter
       3/4 cup milk
       1 cup blueberry
Instructions:
Preheat oven to 350 degrees, prepared 18 muffin cups with paper liners
Mix together sugar, flour, salt and baking powder
add butter and mix until mixture resembles coarse crumbs
Mix in egg, milk and vanilla
Add blueberries
Add batter to prepared muffin cups, filling each cup two-thirds full
Bake 20 minutes or until toothpick inserted comes out clean
remove cupcakes from the muffin cups
Completely cool down before decorating
Strawberry Baby Shower Cupcakes

Ingredients:
3/4 cup white sugar
3 eggs
1 stick of butter
1 3/4 cups flour 1 tsp strawberry extract
1/4 tsp salt
1/4 cup finely chopped fresh strawberries
Instructions
Preheat oven to 325 degrees, prepared 12 muffin cups with paper liners
Use electric mixer to mix butter and sugar until light and fluffy
Add eggs, one at a time, mixing well
Stir in strawberry extract
Add flour and salt to the mixture and blend together
Finally add strawberries
Bake 20 minutes or until toothpick inserted comes out clean
remove cupcakes from the muffin cups
Completely cool down before decorating
Coconut Baby Shower Cupcakes

      Ingredients:
      2 cups sugar
      3 stick butter
      1 1/2 tsp vanilla extract
      3 cups flour
      1/2 tsp baking soda
      1 cup buttermilk
      5 large eggs
      1 1/2 tsp almond extract
      1 tsp baking powder
      1/2 tsp salt<
      7 ounces shredded coconut
Instructions:
Preheat oven 325 degrees
Use electric mixer to mix butter and sugar until light and fluffy
Add eggs, one at a time, mixing well
Add vanilla and almond extract, mix well
Add to mixture flour, baking soda, baking powder, salt and buttermilk
Add in coconut
Bake 20 minutes or until toothpick inserted comes out clean
remove cupcakes from the muffin cups
Completely cool down before decorating

As a general rule flowers requires a stiff icing. The real key to making beautiful flowers
is the consistency of the icing which will shape the petals of the flower. Royal icing is a
very good choice as well.
To create embossed cupcakes simply buy ready made fondant, use an embossed mat shown
below that can be bought at any Kmart, roll the fondant on top of the mat for instant design
and use a round cookie cutter to cut out a perfect circle. Apply on top of the cupcake and brush
on silver luster for a shimmer effect, silver luster can be bought at any cake decorating store.
A quick tip, use store bought icing to use as an adhesive, apply small amount on top of the
cupcake before applying the fondant.
