Fried Green Tomatoes

Ingredients:
2 green tomatoes, sliced thick
1 cup of buttermilk
2 eggs beaten
1 cup of flour
1 tsp salt
Instructions:
In a bowl, whisk eggs and buttermilk together
in another bowl mix flour and salt
dip the tomatoes in the buttermilk mixture and in the flour
fry in hot oil for 3 to 5 minutes or until golden brown
serve with ranch dip (optional)

       Ingredients:
       Little smokies sausages
       crescent rolls
       parmesan cheese
       garlic salt
       Instructions:
       Unroll a triangle of crescent roll
       Make a small slit in the sausage
       insert the cheese into the slit
       roll the sausage onto the crescent roll wide side first
       place in baking pan and sprinkle with garlic salt
       bake according to crescent roll directions
Crock Pot Swedish meatballs

Ingredients:
30 - 40 frozen meatballs
2 cups of catsup
1 large jar of apple jelly
Instructions:
add meatballs
sauce should be covering all meatballs
cook on low for 8-10 hours
cook on medium for 6-8 hours
cook on high for 4-6 hours

Baby shower Appetizers: Bacon Pinwheels
       Ingredients:
       6 bacon strip sliced
       6 oz of cream cheese, softened
       1/2 cup of mayonnaise
       1 small can of mushroom drained
       1/2 tsp of garlic powder
       crescent rolls
Instructions:
Cook bacon until crisp
in small bowl beat cream cheese and mayo until smooth
add the bacon, mushroom and garlic powder
separate crescent dough into four rectangles
spread cream cheese mixture over each rectangle
roll them up starting with the short side
pinch seams to seal and cut each into six slices
place slices cut side down on greased baking sheets
bake at 375 degrees for 10-12 minutes
Tomato Basil Bruschetta

Ingredients:
6 -7 very ripped tomatoes
2 gloves of garlic minced
1 tbsp extra virgin olive oil
1 tsp vinegar
6 basil leaves
salt and pepper to taste
1 baguette of French bread
1/4 cup of olive oil
Instructions:
boil the tomatoes for one minute
remove the skin of the tomatoes
cut the tomatoes in halves
remove the seeds and juice from the center
preheat oven at 450 degrees
chop up the tomatoes finely
add tomatoes, garlic, olive oil, salt, pepper, basil and vinegar in a bowl and mix
slice the baguette about 1/2 inch slices
coat one side of each slice with olive oil
place on a cooking sheet, olive oil side down
place in the oven on the top rack
toast for 5 minutes or until golden brown
align the bread on a serving platter
place the tomato topping on the toasted bread
do it right before serving or the bread may get soggy
add a little cottage cheese
Baby shower Appetizers: Buffalo wings

       Ingredients:
       40 chicken wing pieces
       1 tbsp vegetable oil
       1 tsp salt
       1 cup of flour
       1 1/2 tbsp white vinegar
       1/4 tsp cayenne pepper
       1/8 tsp garlic powder
       1/4 tsp Worcestershire sauce
       1 tsp Tabasco sauce
       1/4 tsp salt
       6 tbsp Louisiana hot sauce
Instructions:
Preheat oven to 425 degrees
spin a bowl toss the wings with oil and salt
place into large ziploc plastic bag and add the flour
shake to coat evenly
remove wings from bag, shaking off the excess of flour
spread out on oiled baking pan
bake for about 20 minutes, turn the wings over and cook for another 20 minutes
while the wings are baking
mix all the ingredients for the sauce in a pan
over low heat bring to a simmer, stirring occasionally and then turn it off
after the wings are cooked, transfer to a large mixing bowl
pour the sauce over the hot wings and toss generously
Bacon wrapped scallop

Ingredients:
2 large sea scallops, cut in half
12 pieces of bacon, cut in half
garlic powder
lemon pepper
teriyaki sauce
cayenne pepper
olive oil spray
Instructions:
Cut large scallops in half
wrap each scallop in a strip of bacon and secure with a toothpick
spray with olive oil spray and sprinkle with teriyaki sauce on both sides
sprinkle with garlic powder and cayenne pepper
place in baking dish and bake at 425 degrees for 20 to 30 minutes or until done
serve with sweet and sour
Baby shower Appetizers: Deviled eggs

      Ingredients:
      6 hard-boiled eggs
      2 tbsp of minced sweet onion
      2 tsp sweet pickle relish
      2 tsp creamed horseradish sauce
      2 tsp yellow mustard
      salt
      paprika
      olives
      chives
      parsley
Instructions:
Slice hard-boiled eggs in half lengthwise
remove egg yokes to a bowl and set egg whites aside
mash the egg yolks until crumbly
add sweet onions, pickle relish, mayonnaise, horseradish sauce, mustard and salt
mix until well combined
spoon mixture into egg white halves
garnish with paprika, olive, chives and parsley
chill before serving
Spring Rolls

Ingredients:
Spring roll wrappers
1/2 cup bean sprouts
1/3 of green cabbage, chopped
5 chopped green onions
1 cup pre cooked thin rice noodles
1/4 cup fresh herbs (cilandro, basil)
1/4 cup grated carrot
1 tbsp lime juice
1 tbsp soy sauce
1/2 tsp grated ginger
Instructions:
Toss all the ingredients in a bowl
dip wrappers in hot water until usable, for about 15 seconds
Put 2 tbsp of mix on a wrapper and wrap your spring rolls
serve with dipping sauce
spray with olive oil
spray and sprinkle with teriyaki sauce on both sides
sprinkle with garlic powder and cayenne pepper
place in baking dish bake at 425 degrees for 20 minutes or until done
serve with sweet and sour
Baby shower Appetizers: Cheese Ball
      Ingredients:
      8 ounces cream cheese
      8 to 16 ounces sharp cheddar cheese, grated
      1 package Hidden Valley Ranch dressing
      1/2 cup mayonnaise
      1/2 cup skim milk
      red pepper (optional)
      chopped green onions (optional)
      finely chopped celery (optional)
      finely chopped green pepper (optional)
      minced garlic (optional)
Instructions:
Mix Hidden Valley ranch dressing, milk and mayonnaise
add cream cheese and cheddar cheese, mix well
put into freezer for 20 minutes
shape into balls
put back in the freezer to make the ball firm enough to roll
roll cheese ball in chopped parsley
Baby shower Appetizers: Tomatoes with bread crumb stuffing

Ingredients:
1/2 stick butter
2 tbsp minced onions
1 tsp cumin
1 tbsp chili powder
1/8 tsp cayenne pepper
3/4 cup chicken broth
8 oz cornbread stuffing
1 1/2 cups shredded cheese
4 large tomatoes
Instructions:
In a pan add butter, cumin, onions, cayenne pepper and chili powder
add chicken broth and stuffing mix
remove from heat and add 1 cup of shredded cheese
cut top of tomatoes lengthwise
scoop out inside of tomatoes
fill each tomato with cornbread stuffing
place in a greased baking sheet
bake covered for 25 minutes at 350 degrees
sprinkle with cheese and cook another minute
